This article examines the chemical composition of wild-growing plants in the Syrdarya Region of the Republic of Uzbekistan that are of practical interest as unconventional sources of plant-based raw materials for the food industry. The study focused on dandelion (Taraxacum officinale), plantain (Plantago spp.), nettle (Urtica spp.), camelthorn (Alhagi spp.), and common purslane (Portulaca oleracea). Based on research findings and published literature, the contents of proteins, fats, carbohydrates, dietary fibre, organic acids, vitamins, and minerals were examined. The findings indicate that the plant materials under investigation have diverse chemical compositions. According to the data presented, common purslane is characterised by relatively high contents of proteins, fats, dietary fibre, vitamin E, and iron; plantain is notable for its dietary fibre and vitamin C content, while nettle is distinguished by its vitamin C and potassium content. These findings highlight the potential for further investigation of wild-growing plants as functional ingredients for enriching bakery products and other food products. Additional studies on the chemical composition, safety, and technological properties of locally sourced plant materials are required to substantiate their potential industrial applications.
