APPLICATION OF MEDICINAL PLANT MATERIALS IN THE PRODUCTION OF DIABETIC DRIED CRUSTS

Annotation

Dietary products oriented for diabetics should have a low glycemic load, maintain stable blood glucose levels, and, where possible, provide additional beneficial effects. This article analyzes the potential of using powders from three medicinal plant sources, i.e., Ferula foetida, Stevia rebaudiana and Salvia officinalis in the production of diabetic dried crusts. The chemical composition of each of these plants was analyzed in depth, with an emphasis on their respective bioactive compounds beneficial for individuals with this disease. Their functionality, including antiglycemic, antioxidant, and anti-inflammatory potential, was assessed. The results of the research allow suggesting that a combination of these plant powders could form the basis for the development of innovative diabetic dried crusts with improved therapeutic and prophylactic properties.
